...about basses. Tell me, what's up with those pickups that look like a single coil cut in half but stacked offset? What are they, what makes em unique?

I dont know actually, but heres a guess. Having the other half of the pickup further up the neck deepens the sound of the top strings to match the bottom strings

They're called split-coils. They make them for guitar too (see the G&L Will Ray signature), but then they called them Z coils (and they're not very popular).

Yes sometimes they are hum canceling.
