I'm just wondering what you guys have experience, like, dislike in multi-tracking recording software. ProTools seems to be the industry standard, but I have seen others that have some very nice features. We're talking professional level, studio quality, stuff here, not Audacity (Audacity's nice for what it does but not high end enough for what I'm thinking about).

I personally use ProTools.

I use Guitar Tracks Pro 3, which is Sonar taylored to guitar players. I also have Cubase but don't use it much.
If looking for a job doing this you might want to stick with protools.
I like using Sonar for the following reasons. 1) They have good support and a good users forum if you have problems. 2) I liked the way it is layed out. Easy to understand how it works over Cubase.

Eclectifish check out gearslutz. com That's the best forum I've found for this stuff. Lots of engineers worldwide. Everybody in Nashville is on pro tools it seems. They got a jump on things and became as you say the industry standard. Some say because of compatibility issues only. Here, if you want to colaborate and everybodys got protools, well you need get pro tools. Plus the engineers know pro tools so that's what ALL the major studios I've been to have. My cousin has both cubase and pro tools and prefers cu base and is turning out some amazing sounding stuff. He says that cubase has a lot more plugs ins available. He's in Florida and works alone though. He does say the learning curve is harder with cu base. I'm told by some engineers here that the m box still has latency issues, due to the usb port, and is largely avoided. Several writers I know have the Digi 002 (not the rack mount) and they love em and their demos sound great. I think that's what's what I'm getting. If you haven't already, check it out. It's a killer piece of hardware. If you're looking into more pc power check out the Creation Stations at Sweetwater. Their support is second to none.

its a matter of opinion, all sequencers have their pros & cons. I like to use cubase personally. I hear there is a guitarist version of cakewalk but i tend to stay clear of it.
