There are several great sites where you can find out more on the different pick styles. But just for the record, let's see how many I can think of for you to look up on:
1. Sweep picking
2. Alternate Picking
3. Economy Picking
4. Chick'n Pick'n
5. String Skipping
Uhhhh.... ok I am out of picking, and yes... chick'n pick'n is real... A good rock example of it is "Going Crazy" from David Lee Roth. You use your pick and fingers at the same time, and if you do it right, your pick hand looks kinda like a chicken foot, hence the name http://www.zentao.com/ubb/smilies/smile.gif

OH almost forgot, check www.wholenote.com (http://www.wholenote.com) under lessons for a lot of excercises on the different styles.

also note that many guitarists will alternate between fingers and picks, many will switch during a passage.
And don't forget

cross picking

"Tremelo picking" is a form of alternate picking, although it can also be done with the index and middle fingers in fingerstyle.

Playing "artificial harmonics" is another kind of "picking." (Fret the string with one hand and then touch the harmonic with the first finger of the other and actually "pick" or pluck the string with the thumb, second or third finger.)

Althought they are pretty subtle, "variations" on harmonics can be played by picking the string in different places between the fingerboard and the bridge, thereby varying the sound.
