I don't know much about dl'ing freeware or demo programs but I've got Acid pro 4.0 and sound forge 6.0 and I love both of them. You could always go to download.com and see what they have to offer.

Yep, Acid Xpress 3.0 is the one you want from www.download.com. It's fantastic, very easy to use, and you can use a little hack-like cheat to have unlimited MP3 conversions ... check out the user reviews, the one by me: http://www.download.com/Acid-XPress/3000-2170-10228816.html?tag=lst-0-1 .
I get pretty good results with guitar --> effects pedal --> amp: www.soundclick.com/BrendanS

thx guys, um i dled the wrong version (pro 4.0) but im gonna hit up the Xpress now. its so fun recording... except i get extra distortion through my crude setup so anything with a distortion model sounds like a gorilla with a bannana lodged in its throat...

Audacity, as mentioned above, is free and really good. Nice and simple for recording.

+1 for Audacity
Cards I use: SB USB mp3+ (16 bit), SB Live 5.1 (16 bit), and SB Audigy LS (24 bit)
Guitar Amp line out -> 4 channel analog mixer -> sound card in
Distortion with sound cards is common, I've noticed that lots of people have trouble with that. It's clipping from too much voltage on your line level. Most cards can only take 2 volts.
Record something and look at the wave graph on Audacity, or whatever software yer using, and turn down the input level untill none of the wave ends touch the limits. Clean is easy, overdrive needs more care. My amps have separate gain and volume levels, so I can get overdrive at low volumes.
