Hard to argue with this choice.
I do like Angelina by Tommy Emannuel.
but, then again, I like just about anything Tommy plays.
Incredible with the acoustic.(acoustic electric, actually)
Second choice, I Still Cant Say Good bye- Chet Atkins.

My current acoustic fav is http://www.youtube.com/watch?v=gOv0a119E4o Machinegun Man by Zakk Wylde.

Very powerful playing, powerful vocals, and explosive performance...

Indeed, to many to choose from (great thread, by the way), but here are a few:

Simon & Garfunkle:
Sound of Silence
The Boxer
I am a Rock

Bob Dylan (or the Byrds):
Mr. Tambourine Man

Queen:
'39
Dreamer's Ball

Gordon Lightfoot:
The Wreck of the Edmund Fitzgerald

Just a few of my all-time favorites, but the list could go on ad nauseum!

I always thought Jim Croce was a stellar acoustic player, as is James Taylor...Paul Simon plays really well...I always liked "Hole Hearted" by Extreme, that's a great wild acoustic jam. Jeez, too many to name!!

Oh man, can't pick only one.

CSN, Teach your children
http://www.youtube.com/watch?v=p6pphVs8bF0

Neil Young, Old man (even though he hates the Southern Man ;-)
http://www.youtube.com/watch?v=TiVxAYctd0Q

Ventura Highway
http://www.youtube.com/watch?v=KnhKcCwZwl8

Horse with no name
http://www.youtube.com/watch?v=2yPqYl6DJJs

Beatles, norwegian wood, blackbird.

Tommy Emmanuel doing Classical Gas (although he's kind of a show off)
http://www.youtube.com/watch?v=hU-3_D26mUg

I don't have a favorite Kottke song but his playing is phenomenal
http://www.youtube.com/watch?v=xwWBC_ZlLeE

Jim Croce, David Bromberg, Harry Chapin all have great songs

I never really noticed how beautiful this song is until I heard this version of Guitar Gently Weeps by Jake Shimabukuru. I can listen to this one all day. It's not just his playing, it's a beautiful song.
